華洋薈萃的動感之都經常為廚子帶來創意靈思。毗鄰文武廟的Man Mo Cafe 主腦、生於瑞士的Nicolas Elalouf, 便找來Robuchon和鼎泰豐的嫡傳大廚,把包餃麵飯等傳統美食巧加變奏。像由本地魚鮮熬製並搭配迷你魚餃的法式魚湯、以免治牛肉替代傳統叉燒兼隨送自家醬汁的漢堡.包、羅勒香蒜外皮內藏番茄莫蘇里拉芝士的碧翠蒸餃,以至松露布里芝士鍋貼及Nutella 煎堆等。既攙進歐洲的獨特食材與風韻,也保留傳統精髓,一如這小城的獨特個性。
